What Is a kebab?

Kebab is a national Turkish dish. Simply, it's meat cooked over fire or grilled.
The Doner Kebab is the most well known. Its layers of filleted meat or minced meat or chicken are assembled on a skewer and cooked slowly on a rotating vertical grill, which helps drain off the fat. The meat is then put into a round piece of Lebanese bread with ingredients chosen by the customer. These may include hommos, tomato, lettuce, onions, tabouli, cheese and special tahini, barbecue or tomato sauces. The whole works is then rolled into a manageable sandwich and slightly toasted under a special press.
